Savory, slightly spicy, and oh so wonderfully rich in umami flavors this Miso Ginger Pork has an unexpected complexity of flavors that will make you want to lick the plate clean.
Ingredients in Miso Ginger Pork:
- Pork tenderloin, thinly sliced. The thin slice on the meat allows the marinade to soak through the meat with the minimal marinating time. You can also substitute chicken, beef, or shrimp in place of the pork.
- Ginger. Peppery, slightly sweet, and spicy that mellows with cooking. Just be careful because ginger will burn easily. If you find fresh ginger to be too strong you can substitute ground ginger which is milder in flavor.
- Rice Wine Vinegar. Slightly sweet and adds just the right amount of acidity.
- Sesame Oil. Very earthy and nutty in flavor. Sesame Oil can be very strong so a little goes a long way.
- Soy Sauce. Salty, sweet, a tab bit bitter, and brings all of that savory umami flavor.
- White Miso Paste. Wonderfully nutty, slightly sweet and adds another mild umami layer to this dish. This is added at the end and not in the marinade since miso paste can burn very easily.
- Brown Sugar. Adds a deep caramel flavor due to the molasses and brings the whole dish together.
How to make Miso Ginger Pork:
Mix together the ginger, rice wine vinegar, sesame oil, soy sauce and garlic.
Add the pork and coat well. Marinate about 10 minutes.
Mix together the soy sauce, rice wine vinegar, white miso, and brown sugar. Set aside.
Heat oil in a large frying pan, add pork in a single layer and sear.
Flip and cook until no longer pink.
Add the reserved seasoning and coat well.
Serve immediately.

Miso Ginger Pork Loin
Ingredients
Marinade
- 1 lbs pork tenderloin thinly sliced
- 1 inch knob ginger peeled and minced
- 1 tbsp. rice wine vinegar
- 2 tsp sesame oil
- 2 tbsp. soy sauce
- 2 cloves garlic minced
Seasoning
- 1 tbsp soy sauce
- 1 1/2 tsp rice wine vinegar
- 2 tbsp white miso
- 1 tsp brown sugar
- 1 tbps neutral oil
Instructions
- Mix together the ginger, rice wine vinegar, sesame oil, soy sauce, and garlic. Pour over pork and let stand for at least 10 minutes.
- While the pork is marinating, mix together the remaining soy sauce, rice wine vinegar, white miso, and brown sugar. Set aside.
- Heat the oil in a large frying pan over medium to medium-high heat. Add pork in a single layer and sear. Flip the pork and cook until no longer pink and then add the seasoning sauce.
- Flip the pork to make sure the seasoning has coated both sides.
- Serve immediately.
