Ingredients

  • 2 lbs zucchini
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 tsp thyme dried
  • 1/2 tsp basil dried
  • 1/2 tsp rosemary dried
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper

Instructions

  • Preheat grill or grill pan to medium heat.
  • Trim ends off of the zucchini. Cut zucchini lengthwise into quarters.
  • Mix remaining ingredients in a small bowl.
  • Brush zucchini with olive oil and balsamic vinegar mixture.
  • Grill zucchini 3-5 minutes per side until charred and tender but not breaking down.
