Blueberry and Banana Pancakes

One of the first things I learned to cook as a child was pancakes.   These Blueberry and Banana Pancakes are filled with fresh blueberries and bananas and make the perfect weekend breakfast or bunch!

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 4 tsp baking powder
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/4 tsp cinnamon
  • 2 cups milk
  • 1 egg, beaten
  • 1/4 cup vegetable oil
  • Juice from 1/2 a lemon
  • 1 tsp pure vanilla extract
  • 1/2 cup blueberries
  • 1/2 cup bananas, mashed
  • Blueberries, powdered sugar, and maple syrup for serving.

Instructions

  • Combine flours, baking powder, sugar, salt, and cinnamon in a large bowl and mix well. 
  • Stir in milk, egg, oil, lemon juice, and vanilla.   
  • Fold in bananas and blueberries. 
  • Preheat griddle and grease lightly.  Use about ¼ cup batter for each pancake.  Cook until done, turning once, about 3-4 minutes.
