2tbspvegetable oil
2largeshallots, diced
1/2cupbourbon
3peaches, peeled and sliced, or 1 lb. frozen
1cupwater
3/4cupbrown sugar, packed
2tbsphoney
2 tbsptomato paste
1/3cupketchup
1/2cupsoy sauce
1/2cupapple cider vinegar
2tspfish sauce
2tbspbalsamic vinegar
1tbspWorcestershire sauce
1tbspDijon mustard
1/2tspkosher salt
1/2tspblack pepper
1tspchili powder

Instructions
In a large sauce pot add vegetable oil and shallots and cook until soft, about 3-4 minutes.
Add bourbon and cook for an additional minute.
Add peaches and water and cook until tender.
Using an emersion blender and puree until smooth. If you do not have an emersion blender, puree in a food processor – just remember that the hot sauce will expand!
Add remaining ingredients to pot and cook over medium heat until thickened. About 5 minutes.
