Ingredients

  • 8 cups green beans washed and trimmed
  • 4 slices bacon cut into lardons
  • 7 ounces ham steak cut into bite size cubes
  • 2 cups onions diced
  • 2 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • 3 cups chicken stock
  • 2 cups red potatoes quartered
  • 2 tablespoons Cajun seasoning

Instructions

  • In a large skillet or pot, cook the bacon until crispy, remove and set aside, leaving rendered fat behind.
  • Add the ham and cook until browned. Remove and set aside.
  • Add the onions and sauté until translucent and fragrant.
  • Add the flour and sauté for about 3 minutes to cook out that flour taste.
  • Slowly pour in the chicken stock, mixing well to incorporate the flour.
  • Add the green beans, potatoes, minced, garlic and Cajun seasoning, together with the reserved bacon and ham in the skillet with the onions. 
  • Reduce the heat to low and cover the skillet or pot
  • Allow the beans to simmer gently for about 30 minutes, or until tender, stirring occasionally to ensure even cooking and to prevent sticking.
