Ingredients

Chipotle Mayonnaise

  • 1/2 cup mayonnaise
  • 1 chipotle chili in adobo chopped
  • Juice from 1/2 lime

Fried Chicken

  • 6 Chicken thighs
  • 4 tsp salt divided
  • 3 tsp pepper divided
  • 1.5 cups all-purpose flour
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1.5 cups seltzer water
  • Vegetable oil for frying
  • 6 brioche buns toasted

Instructions

Chipotle Mayonnaise

  • Combine mayonnaise, chipotle chili in adobo and lime juice. Set aside to marry the flavors.

Fried Chicken

  • Begin heating 1 inch of oil to 375 degrees.
  • Cut the extra fat from the chicken thighs and season well with 2 tsp of salt and 1 tsp of pepper.
  • Add the remaining salt and pepper together with the onion powder, garlic powder, paprika, and cayenne pepper.
  • Add seltzer water and mix until smooth.
  • Dip the chicken thighs in the batter.
  • Slowly lower the chicken thighs into the hot oil, working in batches if necessary.
  • Cook untouched for 5 minutes, flip and continue to cook for an additional 5 minutes.
  • Spoon chipotle mayonnaise to the top of a bun. Top the bottom of the bun with one chicken thigh, top with coleslaw and top bun. Enjoy!
