Southern Style Smothered Chicken

Ingredients

  • 1 whole chicken, cut into 6 pieces, or 8 chicken thighs
  • 1 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 1 onion chopped
  • 2 cloves garlic diced
  • 2 cups chicken stock
  • 1/2 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon thyme
  • green onion optional

Instructions

  • Season chicken with half of the Cajun seasoning.
  • Season flour with remaining Cajun seasoning.
  • Dredge chicken in all-purpose flour, shaking off any excess.
  • Heat the vegetable oil in a large skillet over medium-high heat.  Add the chicken to the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
  • Remove the chicken thighs from the skillet and set aside on a plate.  Add 4 tablespoons of flour to the oil and make a chocolate covered roux.
  • Add the chopped onion and minced garlic to the skillet and cook until softened, about 2-3 minutes.
  • Add the chicken broth to the skillet and thyme, stirring to scrape up any browned bits from the bottom of the pan.
  • Bring the broth to a simmer and cook for 5-7 minutes, or until it has thickened slightly.  Stir in the heavy cream and add thyme and Cajun seasoning to taste.
  • Add the chicken back to the skillet.
  • Cover the skillet with a lid and simmer for 30-35 minutes, or until it’s cooked through and tender.  Garnish with chopped green onion, if desired, and serve hot.
