Chicken Fried Steak

  • 1.5 cups milk
  • 3 eggs
  • 2 cups all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 3 pounds cube steak
  • 0.5 cups vegetable oil

Gravy

  • 3 tablespoons pan drippings
  • 3 tablespoons all-purpose flour
  • 2 cup whole milk
  • 2 teaspoons Cajun seasoning

Instructions

Chicken Fried Steak

  • Pat the steak nice a dry and season with salt and pepper, or if you want to spice it up, Cajun seasoning. 
  • Set up your dredging station – whisk the eggs and mild together in one bowl, and flour seasoned with the Cajun seasoning in another.
  • Dredge the steaks first in the flour, shaking of any extra, then in the egg mixture, and once again in the flour.
  • In a large skillet, heat vegetable oil over medium-high heat. Carefully place the coated steak in the hot oil, ensuring not to overcrowd the pan. Fry each side for approximately three to four minutes, or until golden brown.
  • Once cooked to perfection, transfer the chicken fried steak to a paper towel-lined plate to drain excess oil.

Gravy

  • Remove all but approximately 3 tablespoons of oil from the skillet used for frying.
  • Over medium heat, whisk in 2 tablespoons of all-purpose flour, ensuring that it combines well with the remaining oil.
  • Gradually pour in 2 cups of milk, continuing to whisk until the mixture thickens to your desired consistency. Season the gravy with salt and pepper to taste, enhancing its flavors (I used more Cajun seasoning).
  • Simmer for approximately 5-10 minutes until thickened.
