These simple, tasty oven roasted potatoes will become a go to side dish. They have crispy edges, creamy centers, and wonderful flavor.

Ingredients

  • 2 lbs small potatoes halved or quartered
  • Extra virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 3 cloves garlic minced
  • 3 tbsp parsley minced

Instructions

  • Preheat oven to 425°. Line a baking sheet with foil or parchment paper.
  • Toss the potatoes with olive oil, salt and paper. Roast 20 minutes.
  • Remove from oven and toss with garlic and parsley.
  • Roast an additional 10 minutes.
