One of the first things I learned to cook as a child was pancakes. These Blueberry and Banana Pancakes are filled with fresh blueberries and bananas and make the perfect weekend breakfast or bunch!
My family LOVES pancakes and this Blueberry and Banana Pancake recipe is asked for time and time again, especially when blueberries are in season. If you can’t get fresh blueberries, this recipe works well with frozen as well. Just make sure they are fully defrosted first and add after you pour the batter on the griddle.
I use half all-purpose flour and half whole wheat flour in this recipe and I love the extra nutty flavor the whole wheat flour gives them. Don’t have or like whole wheat flour? No worries, just use the all-purpose flour. You will still end up with light, fluffy pancakes with blueberries that have that burst in your mouth goodness!!

How to Make Blueberry and Banana Pancakes
These Blueberry and Banana Pancakes couldn’t be easier to make.
- Combine all of your dry ingredients in a large bowl which includes your flours, baking powder, sugar, salt, and cinnamon.
- Stir in the milk, egg, lemon juice, and vanilla.
- Carefully fold in the mashed banana and blueberries.
- Get your plan or griddle nice and hot before adding the batter, then turn down the heat.
- Pour the batter in 1/4 cupful’s.
- Cook 3-4 minutes per side.

Blueberry and Banana Pancakes
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 4 tsp baking powder
- 1 tbsp sugar
- 1 tsp salt
- 1/4 tsp cinnamon
- 2 cups milk
- 1 egg, beaten
- 1/4 cup vegetable oil
- Juice from 1/2 a lemon
- 1 tsp pure vanilla extract
- 1/2 cup blueberries
- 1/2 cup bananas, mashed
- Blueberries, powdered sugar, and maple syrup for serving.
Instructions
- Combine flours, baking powder, sugar, salt, and cinnamon in a large bowl and mix well.
- Stir in milk, egg, oil, lemon juice, and vanilla.
- Fold in bananas and blueberries.
- Preheat griddle and grease lightly. Use about ¼ cup batter for each pancake. Cook until done, turning once, about 3-4 minutes.
