Bright, bold and delicious this Danish Red Cabbage is sweet and sour and hits all of the right taste buds. Similar to sauerkraut, but not as sour and slightly sweeter, this red cabbage pairs perfect with just about anything and everything.
This Danish Red Cabbage (Rødkål ) is a traditional side dish most beloved by the Danes. Rødkål is nothing more than the Danish word for red cabbage.
Although it is served year round, this Red Cabbage is most popular at Christmas time when it is served with the traditional Danish feast of roasted pork or roasted duck on December 24th.
Although it is often made just with cabbage, another common ingredient is apples that have either sliced or grated which gives the cabbage more sweetness and texture. With the addition of apples, it is then called rødkål med abler.
Wonderful to eat straight out of the skillet, it is even better the day and it can be stored for about a week in the refrigerator and is a fabulous accompaniment to Danish Meatballs or Frikadeller.

- Red Cabbage
- Apple Cider Vinegar
- Butter
- Sugar
- Salt
- Water

How to make Danish Redd Cabbage:
- Thinly slice your cabbage.
- Melt butter in a large skillet and add sugar, apple cider vinegar, water, and salt. Cook over low heat to dissolve the sugar.
- Add cabbage, toss to coat, cover and simmer on low heat.

- Red cabbage is low in calories (about 28 per cup raw) and a good source of fiber and Vitamins A, C, K, and B6.

Delightfully Delicious Danish Red Cabbage (Rødkål)
Ingredients
- 1 3-4 lb. red cabbage thinly sliced
- 3 tbsp butter
- 1/2 cup sugar
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 2 tsp Kosher salt
Instructions
- Remove the tough outer leave of the cabbage and thinly slice.
- Melt butter in a large saucepan. Add sugar, apple cider vinegar, and water. Simmer until the sugar has dissolved.
- Add cabbage and salt.
- Toss to coat, cover and simmer over low heat for 1 hour. Make sure to check every 20 minutes or so to make sure that the liquid has not evaporated. If so, just add some more water.
