These oven roasted baby potatoes are ohhh so easy to make, giving you a delicious side side with almost no work and pairs well with just about everything!

The variations of these potatoes are endless and you can use just about any herbs and seasoning that you have on hand.  I love adding Cajun seasoning for a kicked up twist.

How to Roast Potatoes

  1. What type of potatoes to use?  I prefer to pass on large russet potatoes, they come out too dry and just don’t have a great texture for this roasted potato recipe. I like to use a mix of Gemstone Potatoes –  a variety of red, yellow and purple potatoes and have a thin skin – but small red potatoes, small Yukon golds, or German butterball potatoes would also be good.

2.  Chop your potatoes into smaller, similar-sized potatoes.  This will make sure that your potatoes cook evenly.  

3.  Spread the chopped potatoes on a baking sheet lined with foil or parchment paper.  Toss with olive oil, salt, and pepper. Roast them in a 425 degree oven for about 20 minutes.

4. Remove from oven and toss with garlic and parsley.  Roast for an additional 10 minutes.  Adding the garlic and parsley to early will cause them to burn.

Ingredients

  • 2 lbs small potatoes halved or quartered
  • Extra virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 3 cloves garlic minced
  • 3 tbsp parsley minced

Instructions

  • Preheat oven to 425°. Line a baking sheet with foil or parchment paper.
