This Grilled Chicken with Alabama White Sauce is a wonderful alternative to the traditional tomato based sticky barbeque sauce. It is perfect for your summer cookouts and easy enough to make after a long day.

Alabama White Sauce is credited to Big Bob Gibson’s BBQ in Decatur, Alabama, back in 1925, this creamy sauce gets its characteristic flavor by combining mayonnaise, apple cider vinegar, Dijon mustard and lemon juice. It’s kicked up with a little hit of prepared horseradish. Oh, and did I mention it’s creamy?
I use chicken strips in this recipe simply because I had every intention of making wraps for lunch the next day. Of course, with all of my good intentions there were no leftovers. Oh, I almost forgot to mention, this also makes a fabulous appetizer, just skewer the chicken first.
Of course feel free to use chicken breasts or chicken thighs. Simply cook the chicken for 3 minutes then flip. Brush with Alabama White Sauce and cook an additional 3 minutes. Repeat until the internal temperature reaches 165 degrees. About 15 minutes.
This sauce is also wonderful on pork and I just love dipping French fries in it.
How to cook Grilled Chicken with Alabama White Sauce
1. Whip up your Alabama White Sauce and refrigerate for 30 minutes so that all of the flavors marry together.
2. Season chicken with Cajun seasoning.
3. Cook chicken on the grill or in a pre-heating grill pan for 3-4 minutes. Flip, brush with sauce, and continue cooking 3-4 minutes.

Grilled Chicken with Alabama White Sauce
Ingredients
For the Chicken
- 1.5 lbs. boneless, skinless chicken breasts cut into strips
- 2 tbsp Cajun seasoning
For the White Sauce
- 1 cup mayonnaise
- 1 tsp Dijon mustard
- 4 tsp olive oil
- 2 tsp lemon juice
- 1/4 cup apple cider vinegar
- 1 tsp horseradish
- 1/2 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
Instructions
- For the white sauce, combine all ingredients in a bowl. Cover and refrigerate for 30 minutes.
- Season chicken with Cajun seasoning.
- Pre-heat grill to 400° or heat a grill pan over medium high heat.
- Cook chicken 3-4 minutes.
- Turn and brush with sauce and cook for an additional 3-4 minutes.
- Serve with Alabama White Sauce on the side.
